I would like to set the button on the pen handle of the liquid tablet to "undo", but I can't.
I can't find "Undo" among the options assigned to Modifier Key Settings → Pen Gesture → Side Button, so I can't seem to do it. Is there any way to do this?
You can do this indirectly by assigning "Show Menu" and selecting "Undo" from the displayed menu, but...

In Crysta's shortcut key settings, assign undo to your favorite key (Ctrl+Z by default) → set it to the stylus button on the liquid tab side
I think that's how it will go.

File menu → [Shortcut key settings] → [Main menu] → [Edit] → Click [Cancel] → Set any key → [OK]

If it's a Wacom liquid tab, I think you can set it to [Ctrl+Z] by selecting the keystroke.

The names vary depending on the pen tablet model, so it cannot be limited.
For example, for Wacom, click "Right button click" or "Middle button click" from "Pen".
    Set "Cancel" for "Keyboard".

Since this is a stylus pen setting, it works with all programs, not just CLIP STUDIO PAINT.
